INTENT:
The design of Gyukatsu Kyoto Katsugyu restaurants is rooted in expressing the calm elegance and cultural richness of Kyoto, the birthplace of the brand.
Drawing inspiration from traditional kappo-style Japanese dining, the interiors create an intimate, refined environment where craftsmanship, materiality, and atmosphere support a slow and mindful dining experience centered on premium beef.

APPROACH:
Natural materials—particularly light-toned and white wood—form the foundation of the design, evoking Kyoto’s historic restaurants and machiya interiors. Extensive use of warm wood across ceilings, walls, counters, and furniture establishes a serene and inviting ambiance.
Textural ceiling treatments, such as slatted wood, exposed beams, or natural wood panels, add depth and warmth while reinforcing the authenticity of traditional Japanese architecture.

Features
Kyoto-specific motifs are thoughtfully integrated throughout the space. The warm glow of paper lanterns and the presence of noren curtains recall the atmospheric streets of Pontocho Alley, where the company’s head office is located. Subtle references to the Gion Festival floats further anchor the design in Kyoto’s cultural heritage, allowing guests to feel a strong sense of place without visual clutter.
Lighting plays a critical role in shaping the experience. Soft, warm illumination from lanterns and concealed fixtures enhances the natural textures of the wood, creating a cozy yet elegant atmosphere. Earthy tones and a restrained palette ensure a calming backdrop, allowing the food and the chef’s craft to remain the focal point.
The spatial layout favors compact, intimate seating, with counters and small tables reminiscent of traditional kappo restaurants. This approach encourages a close connection between guests, chefs, and ingredients, reinforcing the authenticity of the dining experience.
